Meatless Monday

After watching Game Changers on Netflix I was inspired to go meatless for a few weeks to see if there were any posititive affects ion my energy. The lockdown has been knocked me sideways a little and some days I just need a little inspiration, so I am looking more at mixing things up in the kitchen.

Aubergines (Eggplants) and not a staple part of our diet, none of my family are a big fan, but my family does loves lasagne and most things Italian. So we ventured into new Aubergines territory in the hope we could start to enjoy this purple vegetable, we smothered them with a delicious tomato sauce topped then with breadcrumbs and Parmigiano-Reggiano and roasted them in the oven.

Pleased to say it was a family hit!
