Vegetarian week

Every 6 weeks we have a vegetarian week, I guess this is my equivalent of a detox. I am not a big meat eater anyway but my husbands meaty appetite does have a big influence on our weekly menu. So I have been on the lookout for some tasty, meaty dishes (in the non meat sense) that I can serve without too many moans and groans from the other end of the table. Thanks to a recommendation by a friend, I happily pass on this delicious recipe to you all.
