Today BB (our youngest) and I spent the morning baking Anzac biscuits. We decided to make the ones my mum always used to make when I was little (I think the fact they have oats in them made my mum feel better about the other less healthy ingredients).
Out of all the things I have made with the girls these are probably the easiest, least messy and most fun, but still delicious and loved by all the family.
This recipe is out of one of my favourite cookbooks: Sydney by Bill Bryson.
Preheat oven to 160c
1 Cup plain flour
1 cup desiccated coconut
2/3 cup brown sugar
1 cup rolled oats
1 tbs golden syrup
1/2 tsp bicarbonate soda
2 tbs boiling water
and add to melted syrup and butter.
Add everything together, take a teaspoon of the mixture and roll into ball (the fun bit), place on a lined baking tray and gently press the back of the teaspoon on top of the ball to flatten a little (they will go flatter when cooking).
Cook for 15-20 minutes.
Perfect as a lunchbox treat for little (and big) people.
